These Ice Pops are Boozy (and Fruity!)

Red Wine and Plum Ice Pops

Ingredients

  • ½ cup honey
  • ¼ cup water
  • 5 sprigs thyme
  • 6 plums, pitted, cut into 1 ½” chunks
  • 1 bottle full-bodied red (pinot noir, cabernet sauvignon, bordeaux)

Instructions

  1. In a small pot, heat honey, water, and thyme over low heat. Cook until honey is melted, stirring occasionally. Let cool completely, then discard the thyme.
  2. Purée plums in a food processor until smooth. Pour purée through a fine-mesh sieve to separate the skin and pulp, then discard.
  3. Add the purée into a pitcher, then mix in honey simple syrup and the bottle of wine.
  4. Pour mixture into plastic ice pop sleeves or popsicle molds, freeze overnight, and enjoy.
