- ½ cup honey
- ¼ cup water
- 5 sprigs thyme
- 6 plums, pitted, cut into 1 ½” chunks
- 1 bottle full-bodied red (pinot noir, cabernet sauvignon, bordeaux)
Instructions
- In a small pot, heat honey, water, and thyme over low heat. Cook until honey is melted, stirring occasionally. Let cool completely, then discard the thyme.
- Purée plums in a food processor until smooth. Pour purée through a fine-mesh sieve to separate the skin and pulp, then discard.
- Add the purée into a pitcher, then mix in honey simple syrup and the bottle of wine.
- Pour mixture into plastic ice pop sleeves or popsicle molds, freeze overnight, and enjoy.
