How to make whipped strawberry-honey butter:
Bring ¼ cup honey to a gentle simmer in a small pot, then add 6 strawberries (hulled and quartered, ofc). Cook until strawberries soften up, 4 to 5 minutes, then let cool. Add 1 teaspoon vanilla extract to the strawberry mixture, then transfer to a food processor and blitz until smooth. Add 1 cup unsalted butter (room temp!) and blitz until smooth again. Add salt as you like and pulse until the whole thing’s well-combined.

Ingredients
- ¼ cup honey
- 1 pod vanilla (or 1 teaspoon vanilla extract)
- 6 strawberries (about 3/4 cup), hulled and quartered
- 1 cup unsalted butter, room temperature
- ½ teaspoon kosher salt
Instructions
- Add honey to a small pot. Cut vanilla pod in half, scrape seeds out, and add to honey along with the pod. Bring to a gentle simmer over low heat, then add strawberries. Cook, stirring occasionally and pressing on the strawberries until they become very soft, 4 to 5 minutes. Remove vanilla pod and let mixture cool. (If using vanilla extract, stir in at the end, after strawberries have been cooked.)
- Add cooled strawberry mixture to a food processor and blitz until smooth. Add butter and blitz again until smooth and no streaks remain, 2 to 3 minutes. Add salt and pulse until well-combined.
