Fudgy Mocha Brownies 

They’re rich, they’re decadent, they’re exactly the kind of dessert we want to bring to every picnic, potluck, or party. As easy to make as brownies, but with a little something special in the form of fresh-brewed coffee (might we suggest our own Odds & Ends dark roast?).

Fudgy Mocha Brownies

Ingredients

  • ½ cup (1 stick) unsalted butter
  • 1 cup granulated sugar
  • ½ cup semisweet chocolate chips
  • ¼ cup hot dark roast coffee or espresso
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup cocoa powder
  • ½ cup all-purpose flour
  • ½ teaspoon kosher salt
  • ⅛ teaspoon baking soda

Instructions

  1. Heat oven to 325 degrees F.
  2. Grease an 8-inch square baking pan with butter or cooking spray and line with parchment paper.
  3. Combine butter and sugar in a small saucepan over medium heat. Cook and stir occasionally, until butter comes to a gentle simmer. Remove saucepan from heat, add chocolate chips, and mix until melted. Pour in coffee and mix until well combined. Transfer chocolate mixture to a large bowl and set aside until warm to touch.
  4. Add eggs and vanilla extract, whisk for 1 to 2 minutes until well combined. Add cocoa powder, whisk until combined. Add flour, salt, and baking soda and fold in with a silicone spatula until just combined.
  5. Scrape batter into the prepared pan and bake until set and a toothpick inserted in the center comes out clean, 30 to 35 minutes. Cool in the pan before slicing.
