Tinto de Verano

Ingredients

  • 2 lemons, ½ cup juice and peels reserved
  • ½ cup sugar
  • ¼ teaspoon sea salt
  • Dry red wine
  • Sparkling water
  • Lemon rounds, for garnish
  • Ice

Instructions

  1. In a small saucepan, add lemon peels and sugar. Work the lemon peels into the sugar with your hands to express the oils from the peels. Add lemon juice and salt to saucepan and heat over low heat until sugar dissolves. Let simple syrup cool then strain.
  2. Fill a glass with ice, add 2 ounces of wine, 1 ounce simple syrup, and top with sparkling water. Stir then garnish with a lemon round.
