For the potatoes:
- 4 russet potatoes, scrubbed and pat dry
- 2 tablespoons olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
Topping options:
- Butter
- Grated cheddar cheese
- Baked beans
- Tuna and mayo (1 can tuna mixed with ⅓ cup mayo)
- Bacon, crumbled
- Scallions, thinly sliced
- Sour cream
Instructions
- Heat oven to 400 degrees F.
- Line a baking sheet with foil and place a wire rack on top. Rub potatoes with olive oil and season with salt and pepper. Roast until potatoes are cooked through with very crispy skin, about 2 hours.
- Cut an “x” on the top of each potato then squeeze sides to expose insides.
- Add butter and mix in with a fork. Top with any other desired toppings and enjoy.
