Jacket Potatoes

For the potatoes:

  • 4 russet potatoes, scrubbed and pat dry
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Topping options:

  • Butter
  • Grated cheddar cheese
  • Baked beans
  • Tuna and mayo (1 can tuna mixed with ⅓ cup mayo)
  • Bacon, crumbled
  • Scallions, thinly sliced
  • Sour cream


  1. Heat oven to 400 degrees F.
  2. Line a baking sheet with foil and place a wire rack on top. Rub potatoes with olive oil and season with salt and pepper. Roast until potatoes are cooked through with very crispy skin, about 2 hours.
  3. Cut an “x” on the top of each potato then squeeze sides to expose insides.
  4. Add butter and mix in with a fork. Top with any other desired toppings and enjoy.
