- ½ cup (1 stick) unsalted butter
- 1 cup granulated sugar
- ½ cup semisweet chocolate chips
- ¼ cup hot dark roast coffee or espresso
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup cocoa powder
- ½ cup all-purpose flour
- ½ teaspoon kosher salt
- ⅛ teaspoon baking soda
Instructions
- Heat oven to 325 degrees F.
- Grease an 8-inch square baking pan with butter or cooking spray and line with parchment paper.
- Combine butter and sugar in a small saucepan over medium heat. Cook and stir occasionally, until butter comes to a gentle simmer. Remove saucepan from heat, add chocolate chips, and mix until melted. Pour in coffee and mix until well combined. Transfer chocolate mixture to a large bowl and set aside until warm to touch.
- Add eggs and vanilla extract, whisk for 1 to 2 minutes until well combined. Add cocoa powder, whisk until combined. Add flour, salt, and baking soda and fold in with a silicone spatula until just combined.
- Scrape batter into the prepared pan and bake until set and a toothpick inserted in the center comes out clean, 30 to 35 minutes. Cool in the pan before slicing.
