- 2 cups cookies or biscuits, crushed
- ½ cup pistachios, toasted, roughly chopped
- ½ cup dried cherries
- ½ teaspoon orange zest
- 5 tablespoons unsalted butter
- ⅓ cup whole milk
- 1 cup semi sweet chocolate chips
- ¼ cup cocoa powder
- ½ cup powdered sugar, divided
- 1 teaspoon instant coffee
- ½ teaspoon kosher salt
Instructions
- Mix together crushed cookies, pistachios, dried cherries, and orange zest in a large bowl.
- In a medium heavy-bottomed saucepan, melt butter over medium heat. Add milk and bring to a very gentle simmer. Turn heat down to low then melt chocolate, whisking occasionally. Add cocoa powder, ¼ cup powdered sugar, instant coffee, and salt, whisk until smooth.
- Pour chocolate mixture over cookie mixture and mix to coat. Transfer everything onto two sheets of plastic wrap and roll tightly into a log. Secure each end, then transfer to the refrigerator and let set, at least 4 hours.
- Remove plastic wrap and coat chocolate salami in remaining powdered sugar. Slice chocolate salami and serve cold.
