Chocolate Salami

  • 2 cups cookies or biscuits, crushed
  • ½ cup pistachios, toasted, roughly chopped
  • ½ cup dried cherries
  • ½ teaspoon orange zest
  • 5 tablespoons unsalted butter
  • ⅓ cup whole milk
  • 1 cup semi sweet chocolate chips
  • ¼ cup cocoa powder
  • ½ cup powdered sugar, divided
  • 1 teaspoon instant coffee
  • ½ teaspoon kosher salt


  1. Mix together crushed cookies, pistachios, dried cherries, and orange zest in a large bowl.
  2. In a medium heavy-bottomed saucepan, melt butter over medium heat. Add milk and bring to a very gentle simmer. Turn heat down to low then melt chocolate, whisking occasionally. Add cocoa powder, ¼ cup powdered sugar, instant coffee, and salt, whisk until smooth.
  3. Pour chocolate mixture over cookie mixture and mix to coat. Transfer everything onto two sheets of plastic wrap and roll tightly into a log. Secure each end, then transfer to the refrigerator and let set, at least 4 hours.
  4. Remove plastic wrap and coat chocolate salami in remaining powdered sugar. Slice chocolate salami and serve cold.


Chocolate salami can be stored in the refrigerator in an airtight container for up to 2 weeks or up to 1 month in the freezer.
