Blueberry Mango Salsa

Blueberry Mango Salsa

Ingredients

  • 1 mango, chopped
  • 1 medium red pepper, chopped
  • 12 medium jalapeño peppers, chopped
  • 3 white onions, chopped
  • 1 cup fresh blueberries
  • 1/4 cup packed fresh cilantro, chopped
  • 1 clove of garlic, chopped
  • 1 tablespoon fresh lime juice
  • Pinch of salt and more to taste

Instructions

  1. Add mango, red pepper, jalapeño pepper, onion, cilantro, and garlic to a food processor. Pulse until mixed, but still chunky.
  2. Transfer to a medium sized bowl. Add blueberries, lime juice, and salt, then mix well. 
  3. Serve with tortilla chips.

What time of year do blueberries ripen?

Blueberries are a favorite all year round thanks to warm regions and greenhouses, but the tastiest blueberries are those that were grown in their season. The blueberry season begins at the beginning of the summer around the middle of June. These are considered the “early” harvest. Blueberries that ripen in July are called the “mid” crop. This is typically one of the biggest months for fresh blueberries. The late blueberry season begins in the month of August. However, if you are wanting to pick blueberries you may not want to wait until this late. Only a few varieties are ready to be harvested in the month of August.
