A make-ahead morning treat starring sweet and tart fresh summer passion fruit.
Ingredients
- ½ cup quick oats
- ½ cup milk of choice
- ¼ cup mango puree
- 2 passion fruits
- 2 tablespoons coconut yogurt
- 1 tablespoon shredded coconut
- 1 tablespoon maple syrup
- ½ teaspoon vanilla extract
- Toppings: ⅓ cup yogurt, 2 passion fruits, fresh mint
Instructions
- Combine all the ingredients into a jar or bowl (besides the toppings) and stir until well combined.
- Place the lid on and refrigerate overnight or for at least 2 hours.
- Once ready, top with coconut yogurt, passion fruit pulp, and a sprig of mint.
