Breakfast for the Week: Decadent Chocolate-Tahini Overnight Oats

These aren’t your regular overnight oats. These are overnight oats that are chock-full of good-for-you chia seeds, nutrient-packed tahini, and sweet, decadent chocolate for good measure. Set yourself up for success by prepping this on a Sunday or Monday. You’ll be left with four mega-large servings, or six smaller servings to enjoy as breakfast (or dessert, honestly!) for the rest of the week.

Chocolate-Tahini Overnight Oats

Ingredients

  • 2 cups oat milk
  • ⅓ cup Soco tahini
  • ¼ cup maple syrup
  • 1½ tablespoons cocoa powder
  • 1 teaspoon kosher salt
  • 2½ cups rolled oats
  • 2 tablespoons chia seeds
  • ¼ cup semisweet chocolate chips
  • 1 teaspoon coconut oil
  • Flaky sea salt

Instructions

  1. In a large bowl, whisk together oat milk, tahini, maple syrup, cocoa powder, and salt until smooth and well combined. Add oats and chia seeds and mix until combined.
  2. Transfer the mixture into a mason jar or an air-tight container and refrigerate overnight until oats are saturated and are a porridge-like consistency.
  3. Divide the overnight oats into bowls. In a heat-safe bowl microwave the chocolate chips and coconut oil in 15-second intervals, stirring in between until melted. Pour the melted chocolate over the overnight oats and finish with flaky sea salt.
