Here’s what to do:
Step 1: Boil 4 cups of water for each color you’d like to make, then add 2 tablespoons of white vinegar to each. (No clear vinegar on hand? You can substitute with lemon or lime juice. Darker vinegars like apple cider vinegar also work, they just may give lighter dye solutions a darker tint.)
Step 2: Add the ingredient of your choice to make the following colors:
- Light orange: 3 orange carrots, chopped
- Yellow: 3 gold beets, chopped, or 2 tablespoons turmeric
- Blue: Half a head of red cabbage, chopped
- Brownish red: Half a red onion, chopped
- Pink: 3 red beets, chopped
- Tan: 2 tablespoons coffee grounds
Step 3: Once you’ve added the veggie ingredients and vinegar to each of the 4 cups of water, let the solutions cool completely.
Step 4: Drain the veggies and soak hard-boiled eggs in each solution overnight.
But before you soak your eggs, don’t forget to customize them! Draw something cute with a wax-based crayon (the dye won’t soak through the wax), apply rubber bands in a pattern, or put stickers on the eggs before dyeing. Then, remove them after soaking and drying.

I receive my first box this week. Any suggestions on how to make the lettuces last? Wilted and soft after one day. Other than that lots of great veggies and I am excited to see my second box!
Hi Clare, we’re sorry to hear that your lettuce didn’t have much life in it! One way to revive wilted lettuce is to submerged it in a bowl of ice water. Let the lettuce hang out for 20 minutes to an hour and they should spring right back to life! Just be sure to cut away any rotted edges before enjoying. Happy cooking!
Hello, I soaked my wilted lettuce in ice water for 20 minutes and then put them in the salad spinner. But they still never got crisp, I think they were beyond help.
The suggestion was 20 to 60 minutes. If your lettuce is weak, soak it 60 minutes and not 20 if you want positive results. A better option is to purchase bread bags from Amazon. When celery or lettuce or greens arrive in your box, put them in a bread bag… Put the twistie tie on and place it in the fridge. This works well and you can keep reusing the bags. Your produce will last at least 5 to 7 days.
I use cooked lettuce in burritos. I know it sounds funny, but it works well. Just shred the lettuce and cook it with onions, peppers, tomatoes … whatever you have. Use it as burrito filling. My young men love it.
