  1. Preheat oven to 425°F.
  2. Bring 4 quarts of water to a rolling boil. Add gnocchi and boil for 3 minutes. Drain and set aside.
  3. On a sheet pan, toss together gnocchi, chopped veggies, garlic/shallots, and herbs. Drizzle generously with olive oil and season with salt and pepper.
  4. Roast for 17–20 minutes, tossing halfway through, until golden and crispy around the edges.
