Weeknight Sheet Pan Pizza

Ingredients

For the dough:

  • 5 cups pizza flour
  • 1 tablespoon granulated sugar
  • 1½ teaspoons kosher salt
  • 3 tablespoons olive oil
  • 1 tablespoon active dry yeast
  • 1¾ cups warm water

For the pizza:

  • 1½ tablespoons olive oil
  • ¾ cup Odds & Ends Marinara Sauce
  • 1½ cups shredded mozzarella
  • 1 bulb fennel, thinly sliced
  • 2 ears of corn, kernels removed
  • 4 ounces chorizo, thinly sliced
  • ¼ cup pickled banana peppers, sliced

Instructions

  1. For the dough: Add all the ingredients into a standing mixer fitted with the dough hook attachment. Mix on low until just combined, then increase the speed to medium and continue to knead for another 2-3 minutes until the dough has fully come together. Cover the bowl with a damp towel and let rise in a warm place until doubled in size, about 90 minutes.
  2. For the pizza: Preheat the oven to 500. Drizzle oil onto a sheet pan and evenly spread until the surface is covered. Knead pizza dough into the pan until the surface is covered. Evenly spread on a layer of marinara sauce, then distribute mozzarella, fennel, corn, chorizo, and banana peppers on top.
  3. Bake pizza for 12-15 minutes until cheese has melted and turns golden brown, and the crust is cooked through. Slice and serve.
