PrintLayered Caramelized Onion Dip
Ingredients
Scale
- 3 tablespoons olive oil
- 3 large yellow onions thinly sliced
- 3 medium shallots, halved and thinly sliced (about 11/2 cups)
- 3 sprigs thyme
- 1 ½ teaspoons kosher salt, divided
- ½ teaspoon sugar
- 16 ounces cream cheese (2 blocks), softened
- 2 cups Norr plain yogurt or plain Greek yogurt
- 1 clove garlic, grated
- ½ teaspoon lemon zest
- 1 teaspoon lemon juice
- 2 teaspoons Worcestershire sauce
- 3 scallions, thinly sliced
- ½ teaspoon pepper
- ¼ cup chives, thinly sliced
- Good Crisp chips, to serve, or whatever chips or crackers you have on hand
Instructions
- Line an 8-inch diameter ring mold, 8-inch diameter cake pan, or springform pan with plastic wrap, pressing it along the sides. You can also build this dip in a bowl.
- Heat oil in a large skillet over medium heat. Add onions, shallots, and thyme, season with ½ teaspoon salt and sugar. Cook, stirring occasionally, until onions and shallots are evenly browned and caramelized, 35 to 40 minutes. Remove from heat and let cool.
- Meanwhile, in a food processor, add cream cheese, yogurt, garlic, lemon zest, lemon juice, Worcestershire sauce, remaining 1 teaspoon salt, and pepper. Blitz until smooth. Add scallions and pulse until just combined.
- To build the dip, place the wrapped ring mold on top of a serving dish. Transfer half of the cream cheese-yogurt mixture into the ring mold, then spread evenly with a rubber or offset spatula. Layer half of the caramelized onion and shallot mixture on top, evenly spread to each the edges of the ring mold. Continue layering with remaining cream cheese and yogurt mixture and finish with a layer of the remaining caramelized onion and shallots. Place in the fridge for at least 30 minutes to firm up (or overnight).
- To serve, release ring mold from dip and pull off plastic wrap. Sprinkle on chives as the final layer.
