Delicata is a long, tubular-shaped squash with yellow and green stripes and an edible skin. It’s often referred to as a “sweet potato squash” due to its sweet flavor and smooth flesh. To get a sense of its flavor, others have described it as a cross between butternut squash and a sweet potato, which means it can take on both sweet and savory flavors alike. We just describe it as deliciously versatile.

The easiest way to enjoy delicata is to slice it into half moons and roast it with olive oil, salt, and pepper—we like this simple method from Rachel Cooks—but where’s the fun in that? Delicata Squash and Kale Caesar Salad

There’s something so satisfying about a big salad. We can’t get enough of them in the fall. Hearty, filling, and chock-full of winter squash. This one calls for delicata, tart apples, crunchy nuts, and a creamy Caesar dressing. 

Wild Rice and Lentil Stuffed Delicata Squash

Stuffed squash is a classic for a reason. Despite the delicata’s smaller size, it’s still the perfect vessel for delicious stuff like wild rice, dried fruit, and sausage. We feel confident that this lentil-stuffed version will soon make its way into your kitchen’s rotation. 

Delicata Squash and Ricotta Pizza

What more is there to say other than: pizza? Top your favorite crust with creamy ricotta, roasted delicata, and lots of fresh herbs for a warming dinner that just tastes like fall. In pizza form. Nothing better.

Sesame-Roasted Delicata Squash

The sweet, yet somewhat mild flavor of delicata squash means it can take on stronger flavors. Like in this dish with sweet maple syrup, toasty sesame, and a hint of spice from adobo sauce. It’s basically an explosion of sweet and smokey flavors in a single dish with delicata as the perfect vessel. 

Delicata Squash Salad with Maple Dijon Dressing

We’re huge fans of adding hardy squash to salads in the fall and winter. (See: Caesar salad above.) It makes an otherwise simple dish into something special—and into something way more filling, too. This recipe calls for roasted delicata squash, juicy pomegranate arils, crunchy nuts, and a sweet-yet-spicy homemade dressing. The best part? Each component of this salad works well together or on its own.

Delicata Squash Red Curry

Make delicata the main event by adding it to this vegan-friendly curry. Serve over rice or lentils for a filling dinner full of flavor.

Garlic Parmesan Roasted Delicata Squash

You can’t really go wrong by adding fragrant garlic and nutty cheese to mild squash. Top with your favorite fresh herb, like parsley, for a deliciously simple side dish that tastes anything but simple.

Brown Sugar Delicata Squash

The mildly sweet flavor of delicata can take on even stronger sweet flavors, which is why it’s perfect when roasted with brown sugar. Save this recipe for an updated dish for your Thanksgiving table, or try it during the week for a sweet side to your favorite main dishes.

Seasonal Squash Galette

Our recipe calls for any kind of root veggie or squash, like acorn, butternut, and, of course, delicata! You can use whatever cheese you have in place of feta, like fontina, gruyère, cheddar, or mozzarella. We like the feta and ricotta combo because feta’s salty-punch really offsets the vegetables and the creaminess of the ricotta is just luscious, but use whatever you have to eat down the fridge.

Cheesy Squash Lasagna

While this recipe technically calls for butternut squash, it could easily be made with delicata instead. You might need to save up a few pounds of delicata to create enough layers, but thankfully delicata can hang out on your countertop for up to 4 weeks before you need to use it. Or, experiment with a combo of butternut, delicata, acorn, and hardy kabocha squash. Just make sure you let us know in the comments how you customize these dishes!

While we love our weekly delivery, service has been getting quite unreliable. This week yet another delay. And though we were notified that our delayed box was shipped we a second notification of a second delay. So which is it? And if we got a notification of shipment how can we be certain that the box is in fact in refrigerated storage as claimed??

What? There’s absolutely no way most boxes could be packed the same day they’re delivered. I had to pause my subscription due to being tired of missing or rotten produce, delayed or never delivered boxes. Yeah, I would get refunds or credits, but it got to the point where I wasn’t excited to get my box, I was more anxious wondering what the problem would be THIS time. The last straw was when I got two boxes of tomatoes that had a sticker with a ‘packaged on’ date three weeks in the past in my box. And they had rotted and gotten all all over everything. To be 100% honest, I would much prefer fresh delicious produce delivered on time and in good condition over having a celebrity chef on board. Or seeing you expand to even more states when you can’t service the customers you already have.

We got our first box last week. Everything was great. The only problem we had was that it was all normal. Hey, we are looking forward to a couple of weirdo examples. We are quite weird also. How about a cucumber shaped like the letter
T, or something just as entertaining to a family like ours. Looking forward to a weirdo or two.

I’ve received my second box yesterday. My first box was very late and missing add ons. Yesterday’s box came on time and looked great but yet again some of the add ons were missing. I really love the boxes that come in but really wish someone would quality control with the add ons. I hate missing what I paid for and having to wait for adjustments or refunds.

Hi. I’m happy with my last box but it had a substitution, I guess, of a large yellow onion instead of the large red onion I picked out. It won’t go to waste, but I was really looking forward to that red onion for a recipe I wanted to make. The other items were accurate.. Thanks.

Please advertise the Blog on your web pages! (More often if you have, and I missed it.) I’m eating more veggies than ever (thank you), but sometimes don’t know what to do with them. I subscribe because I don’t want food to go to waste, so I don’t want to toss what I’ve gotten. I’m thankful for your place in the market. I almost always receive foods in good condition. I blame the occasional not-so-good on the delivery people.

I love these misfits boxes and their arrival date is a highlight of my week. Everything is so fresh and delicious. We are. Evan and have tried lots and lots of veggies, yet I am discovering things I have not tried before. Keep up the fantastic work!

Depending on your delivery and charge date, you’ll have a 3-day window to select what goes into your box based on what we’ve rescued that week. Received our first box of veggies. All was good. Was so excited when it came, we couldn’t wait to see what was inside. We, however had the same problem as one of your other customers, no weird vegetables. A little bit disappointed.????

Sadly we did not get to enjoy the delicata squash because it molded in less than a week! I agree that it should last weeks on the countertop, but sadly that was not true for us. We stored it properly, so it was a bummer that it got moldy so quickly.

I have also had problems with items not being delivered as ordered, and the produce not lasting as long as it should. Before my last delivery, I didn’t get an email asking me to customize my box as has been the case for the last few months. I hope I will be back on the list to be asked to customize going forward!

Shhhh! Delicata Squash was supposed to be our little secret, Misfits! Now everyone will want to find out how amazing roasted Delicata is and run you out of stock.???? Seriously though, I had never tried it before my subscription and I don’t add anything to it and roast it and it turns out amazing. Love your company and my huge boxes every other week. I love trying things I’d never have purchased in the store. Who knew jicama was so good? Keep up the great work!

Love the delicate, but items I picked did not come this week even though I logged in right when it opened! Are you able to supply what you offer? Pomegranate, cabbage, xbaby bok Choy and broccoli may be popular but I thought I’d get at least one of them!

Is there a way we can purchase a one time box for a gift? I’m a member and would like to give a box or two for Christmas gifts, birthday etc but I can’t find a way to do it.

I am very excited to start a membership in Misfits and just received our first box. I saw someone else questioned if you could make changes in what you receive. Where do I go to do this? I am a gardener and grow my own ginger and while what I received was beautiful…I have plenty. I also am allergic to mangoes and received a beautiful one…I love them…but after eating them look like Homer Simpson. I did receive an acorn squash and have never eaten one…can’t wait to try it!!!!!

Roast delicata half moons with smoked paprika in some and Garam masala on there. So yummu

I love the boxes but my second box 2 weeks ago was covered with the gel from the ice pack. Everything was okay. Just had to wash it all well. Not sure what happened. The box wasn’t damaged.

The vegetables and fruits get rotten and moldy way too fast. Most items are from far away places & are definitely not from local or small farms as advertised. I’m shocked by the poor quality of the produce upon arrival. I have yet to receive crisp celery or fresh greens, they are always limp and on the way out…
One week is ok and then the next is not. You definitely have a serious problem where consistency in your products are concerned. I’m not sure I’m sold on this service yet. I keep telling myself let’s see how the next order is??? I hope my next box doesn’t disappoint.

The very special thing about delicata is that the seeds are AMAZING if roasted with oil and salt. I usually also roast the pulp out of laziness and because it’s healthy and full of fiber, but if you separated the seeds it would be more tasty. PS, because you eat the skin, one should always buy organic delicata.

The “giant apples” were so good! We’re they Northern Spies”. If you ever have more than you know what to do with, place them in my bi-weekly box. Did o mention how delicious they were!

I am very pleased with the concept and generally with the contents of my orders–however I definitely agree with some of the comments on the add-ons–I have had several instances of missing items or substitutions that I didn’t order and made no sense—it’s a pain to try to get it corrected or refunded and what the heck am I going to do with two containers of organic oregano that I received instead of the two parsnips that I ordered and did not receive?! there’s a quality control issue in your add-on department–?

I love getting to try new produce that I’ve never tried. The Delicata is amazing roasted with some maple syrup, brown sugar and cinnamon. I love that the peel is edible too. I agree that the quality isn’t what I would expect sometimes and al lot of the leafy vegetables are frequently wilted by the time they get to me and I rarely get the chance to use them. Do you have guidelines for the specific storage suggestions of the various products? It would go a long way towards retaining customers if the produce lasted longer than a couple days. Another suggestion might be a recipe card included with some suggestions for some of the lesser known items or even regular ones. I’ve also had some items that weren’t ripe ( mango) and wouldn’t ripen as they must have been picked too soon. They began to rot, but the flesh was still hard. I know to report quality issues and you’ve been great about fixing mistakes, but I hate to keep reporting problems with the shipments or produce. I know it sounds like I am unhappy, while the truth is that I really enjoy my shipments. They are kind like a birthday surprise and these days, a little surprise goes a long way. Keep up the cool varieties, but help us with the quality and storage.

I like my weekly box and I think it’s worth the money, but a lot of the items are very repetitive. Not really a complaint because I am overall happy with the box, but If you send me anymore beets I’m going to turn into one.

This week my box was terrible. I had to throw out the eggplant and the cucumber. They were. both so old they were mushy. The eggplant had rotten places and was not edible. The pineapple I paid extra for is also very soft. I know they are Misfits which is ok, but I need to be able to use them. This is not the first time I have been disappointed with my box.

I love my box. Occasionally I get a bad veggie or fruit, but I have had this happen in store. We are definitely eating a more varied diet.. I have loved the fact that I have been trying new recipes. I ordered leeks one week because my husband found a soup recipe he wanted to try. Unfortunately by the time the box arrived he had moved on to another project. I tried coating leeks with olive oil, splitting and roasting. And then adding cheese. Unfortunately did not work out as leeks dried out. One tip, when we have any dab of veggies left, I put in freezer and later make vegetable soup. Sometimes I have to add other veggies, but oh so good. Keep up the good work, and I love the idea of recipes.

I’ve been getting the BOX for awhile now and am very happy with what I get! The variety and quality are usually very good. I can’t complain about anything. I love being able to choose some of what I get. My last box had beautiful big apples and the biggest and best tasting radishes I’ve ever had! And of course the Delicata squash is delicious!
