Happy Year of the Ox! To celebrate Lunar New Year, which starts today, we’re getting our fill of longevity noodles. It’s an auspicious —and delicious—dish that’s often on the menu for Chinese versions of this holiday celebration. The length of the noodle is said to represent the length and happiness of one’s life, and the red plates nod to the joy and good fortune typically associated with the crimson hue. Our version of longevity noodles is topped with ginger, mushrooms, and bell peppers, but you can feel free to customize with other veggies.
