Sesame, Ginger, and Garlic Peanut Noodles

  • 2 tablespoons peanut or vegetable cooking oil
  • 8 stalks scallions, cut into 2-inch pieces
  • 3.5 ounces shiitake mushrooms, thinly sliced
  • 3 tablespoons garlic, minced
  • 3 tablespoons ginger, diced
  • 1 red bell pepper, julienned
  • 3 tablespoons oyster sauce (or mushroom flavored “oyster” sauce)
  • 2 tablespoons toasted sesame oil
  • 2 tablespoons chili oil
  • 2 tablespoons soy sauce
  • 1/4 cup roasted peanuts, chopped
  • 12 ounces long, thin noodles (like lo-mein), cooked

Instructions

  1. In a large skillet or wok, add cooking oil and shiitake mushrooms. Cook for 3-5 minutes or until the pieces start to brown, stirring occasionally.
  2. Add the bell peppers and sauté for another 5 minutes or until the peppers start to soften. Toss in scallions, ginger, and garlic and cook for another 2-3 minutes or until the scallions turn bright green.
  3. Then, add oyster sauce, sesame and chili oils, soy sauce, peanuts, and noodles. Mix until evenly combined, taste, and adjust soy sauce to preference. Transfer to a platter and enjoy!
