Mediterranean Cucumber Salad

So when we saw we had a spare cuke in the fridge, we knew what we had to do. Check out our take on this viral veggie trend, and adjust as needed with what you’ve got on hand!

Mediterranean Cucumber Salad

Description

A viral trend, but make it Misfits. We shook up this English cucumber salad for a fresh, food-waste-fighting lunch made with what we already had in our fridge.


Ingredients

Scale
  • English cucumber, thinly sliced
  • ½ red onion, thinly sliced
  • Fresh dill
  • Salt and pepper
  • Olive oil
  • Red wine vinegar
  • Feta cheese

Instructions

  1. Carefully use a mandoline to thinly slice English cucumber and half a red onion.
  2. Roughly chop a few handfuls of fresh dill.
  3. In a bowl, combine prepped vegetables with a drizzle of olive oil, a glug of red wine vinegar, and salt and pepper to taste.
  4. Add about a ½ cup of crumbled feta cheese, depending on your preference.
  5. Stir, or shake to combine in a restaurant-style takeout container, and enjoy!
