  1. Slice zucchini lengthwise, then cut each halve in half to create four pieces per zucchini Transfer to a large mixing bowl and coat with olive oil, salt, and pepper.
  2. Add tahini, lemon juice, water, and garlic to blender and mix until smooth in consistency. Set aside.
  3. Place a grill pan over medium heat. Grill each side of the zucchini slices for about 3-4 minutes.
  4. When ready to serve, transfer to a serving dish, drizzle with tahini sauce, and top with microgreens.

What can I substitute for tahini?

No tahini on hand? No problem! Because it’s made from sesame seeds, you can swap in another seed or nut butter, like cashew, sunflower, or peanut butter. Cashew butter is the most neutral-tasting option. If you’re looking to replace tahini in a sauce or dip, Greek yogurt is a good substitute. Just remember that Greek yogurt has a different texture, so you may need to adjust the amount you use. To get tahini’s signature sesame flavor, try including sesame oil with any of the swaps.
