Bake it and forget it is one of our favorite cooking methods for a one pan breakfast. Top roasted root veggies with poached or fried eggs and get ready to follow this simple recipe every weekend.
Ingredients

- 6 cups potatoes, cubed
- 3 cloves garlic, minced
- 1 large red onion, diced
- 3 tablespoons olive oil
- 3 teaspoons salt
- 2 teaspoons black pepper
- 1 tablespoon smoked paprika
- 4 poached eggs
- Scallions, finely chopped (optional)
- Parsley, finely chopped (optional)
Instructions
- Preheat open to 425°F.
- In a large mixing bowl, combine potatoes, garlic, and onion with olive oil, salt, pepper, and smoked paprika. Toss until evenly coated and transfer to an oven safe skillet.
- Bake for 55-65 minutes, stirring once half way, or until golden brown and fork tender.
- Remove from the oven and immediately prepare the poached eggs.
- Transfer the eggs on top of the baked veggies and garnish with parsley or scallions. Serve and enjoy!

This sounds like a long time to roast red onions at a temperature as high as 425 F. It has been my experience that soft, watery vegetables like onions roast much more quickly than starchier vegetables like potatoes. And even the potatoes, since they are cubed, might roast more quickly than 55 minutes. I suggest checking this after 30 minutes.
I couldn’t be happier with this company! Delivery has been just a few days late but due to the circumstances, I’m just happy it arrives weekly. The selection of organic vegetables and fruits have been wonderful! Be patient people, this outfit is worth it!
