Feta is finally getting the attention it deserves in this salty, savory butter recipe. Grab some Athenos feta to whip yours up, and serve on top of corn charred to perfection in a cast iron—it doesn’t get much tastier than this.

Dill and Feta Butter with Charred Corn

It doesn’t get “beta” better than buttery, herby feta.


Ingredients

  1. ½ cup Athenos feta cheese, crumbled
  2. 1 stick of butter, softened
  3. 12 cloves of garlic, minced
  4. Zest of 1 lemon
  5. 2 tablespoons of dill, roughly chopped
  6. 3 cobs of corn
  7. Salt and pepper to taste
  8. A drizzle of olive oil

Instructions

  1. Roughly chop the dill and garlic, and zest the lemon.
  2. In a large bowl, combine the butter, feta, dill, garlic, lemon zest, and salt and pepper. Mix until smooth and combined.
  3. In a cast iron skillet, heat the olive oil. Once heated and glossy, add the corn, turning frequently, until lightly charred on all sides.
  4. Remove the corn from the skillet and top generously with feta butter. Serve and enjoy!
