Our Soup Guide

Whether you prefer brothy soups, chunky, or creamy ones, our easy-to-follow formulas will help you master any homemade soup in no time.

How to Make a Quick Brothy Soup 

Start with:

2 pounds of meat: chicken breast, chicken thighs, beef, or pork

Or

2 pounds of hardy vegetables: carrots, onions, celery, squash, potatoes, or mushrooms

Pick 2-3 fresh aromatics:

  • Garlic
  • Ginger
  • Onions
  • Shallots
  • Leeks
  • Scallions
  • Herbs: cilantro, parsley, rosemary, thyme, sage

Season with:

  • Salt 
  • Bay leaves 
  • Whole black peppercorns 
  • Cloves 
  • Allspice

Add your liquid:

6-8 cups of water and/or stock

Prep your soup:

  1. Sauté your meat or veg of choice with aromatics for 5-7 minutes.
  2. Add liquid and seasonings of choice, stir, and bring to a boil.
  3. Once your broth is boiling, enjoy as is, or layer in additional ingredients like:
  • More flavor, like a dash of vinegar or soy sauce
  • Even more veggies, like leafy greens, mushrooms, or zucchini
  • Cooked grains like pasta, rice, or lentils

How to Make a Chunky Soup

Start with 2-4 tablespoons of:

  • Olive oil
  • Coconut oil
  • Vegetable oil
  • Avocado oil
  • Butter
  • Ghee

Pick 2-3 fresh aromatics:

  • Onions
  • Shallots
  • Garlic
  • Leeks
  • Scallions
  • Ginger

Prep 5-7 cups of hardy veg:

  • Squash
  • Potatoes
  • Carrots
  • Celery
  • Turnips
  • Parsnip

And 1-2 cups of softer veggies:

  • Zucchini
  • Broccoli
  • Cauliflower

Season with your favorite spices:

  • Salt
  • Pepper
  • Paprika
  • Cumin

Add 6 cups of liquid:

  • Vegetable broth
  • Chicken broth
  • Beef broth
  • Mushroom broth

And finish with 2-3 cups of even more veggies:

  • Kale
  • Swiss chard
  • Spinach
  • Peas
  • Mushrooms
  • Corn

Prep your soup:

  1. Start with your base (butter, oil, etc.) and cook your aromatics.
  2. Add hardy and soft vegetables, season, and add broth of choice.
  3. Cook until everything is tender and fragrant, then enjoy.

How to Make a Creamy Soup

Start with 2-4 tablespoons of:

  • Olive oil
  • Coconut oil
  • Vegetable oil
  • Avocado oil
  • Butter
  • Ghee

  • Shallots
  • Garlic
  • Leeks
  • Scallions
  • Ginger

  • Parsnip

And 1-2 cups of softer veggies:

  • Broccoli
  • Cauliflower

Prep your soup:

  1. Start with your base (butter, oil, etc.) and cook your aromatics.
  2. Add hardy and soft vegetables, season, and add broth of choice. Cook until everything is tender and fragrant.
  3. Add cream or milk and (carefully) blend until you reach your desired puréed consistency.
