Vietnamese Shrimp and Vegetable Rice Noodle Bowls

Here’s your seasonal reminder that those root veggies in your kitchen are for much more than roasting. As we head toward summer, we challenge you to explore the earthy, crunchy side of raw root veggies, starting with this cold noodle bowl that’s inspired by variations of Vietnamese Bún. It pairs raw veggies, fresh cilantro, and rice noodles with a Vietnamese-style nuoc cham dipping sauce. Top it off with shrimp (cooked whatever way you like it) and crunchy peanuts, and you’ll be rewarded with a meal that’s equal parts fresh and satisfying. Plus, with a little prep, you can prepare many of the components in advance to use throughout the week.
