Sweet Potato Veggie Burgers
- Yield: 6-8 1x
Making your own veggie burgers at home is easier than you may think. Simply choose a hardy base, like the sweet potato, and add a few other key ingredients for patties that are perfect with your favorite burger toppings.
- 6 small sweet potatoes, halved (about 1 1/2 pounds)
- 1/4 cup olive oil, divided
- 1 large red onion, diced
- 2 cups cooked quinoa
- 1/2 cup ground flax seeds
- 6 stalks scallions, diced
- 3 cloves garlic, minced
- 3 tablespoons smoked paprika
- 3 teaspoons salt
- 3 teaspoons black pepper
- Preheat oven to 400°F.
- Cover sweet potato halves with 2 tablespoons olive oil and place on a baking sheet, skin side down. Bake for 30-40 minutes or until fork tender. Remove from oven.
- Meanwhile, in a large mixing bowl, combine onion, scallions, garlic, cooked quinoa, flax seeds, paprika, salt, and pepper.
- Once potatoes are cool to the touch, scoop/remove the insides and add to the mixing bowl. Use a fork to mash together all of the ingredients.
- Line a clean baking sheet with parchment paper. Using an ice cream scoop or 1/2 cup measuring cup to scoop individual balls onto the tray, leaving enough space in between to flatten the patties. Use the spoon or your hands to gently press the scoops into round disks. (Patties can be made a day before and stored, covered, in the fridge.)
- When ready to eat, coat a skillet with remaining olive oil and bring to medium heat. Cook the veggie patties for about five minutes, then flip. Cook the other side for an additional 4-5 minutes until golden and crispy.
- Build your burger with your favorite burger toppings—we’re fans of Misfits Market tomato and lettuce, and a thick slice of cheese—and serve!

Clarification please. Does the recipe call for two cups of already cooked quinoa, or two cups of raw quinoa which you cook before adding to the recipe?

Hi! I wanted to say that I have found many uses for the box liner materials in the past few months:
1. I cut to fit and stacked them together, binding them with a little duct tape and slid them into an old dog bed liner. My older pooch loves it! I used approx 4 stacked pieces and like I said, cut them to fit. She has been lying on it for about a month now. It hasnt compressed down at all.
2. On several occasions I have re-used the box (as is) to carry foods that needed a couple of hours of cooler temp when we travel, go to a grocery market outside of town, to protect foods purchased at the farmers market, yo place bulk food and goods in purchased at Sam’s Club, to place and protect plants purchased at the local nursery, etc. I reuse the cold packs and have given at least 10 of them away to people who could use them for various reasons. They dont have to be frozen. You can keep them in a fridge to use for bumps and bruises/first aid snd sore muscles. They are malleable and fit around limbs, trunk well. Just wrap them in a dish towel.
3. The liners can also be taped together in a single or double height and width of your choice and covered with an old sheet or blanket and used as a “sit upon” or larger area on the floor or outside for kids to have a more cushioned and/or level area to play, watch tv, etc instead of a wood or tile or unlevel lawn area
They dont always have to be totally recyclable.
It is interesting and fun to see how one can re-purpose them as well. Children can think of all sorts of things to create with them ( provided they are surpervised/safety rules apply)
