This treat might’ve been popularized as a certain trademarked name that we’re not allowed to use, but we’ve made some major improvements to the basic formula (like browning the butter for extra nutty flavor and swapping in popcorn!).
How to make Salted Brown-Butter Marshmallow-Popcorn Bars:
Brown 1½ sticks butter in a large pot until golden and nutty-smelling, 5 to 7 minutes.
Add 1 (12-ounce) bag of marshmallows to the butter and mix until melted.
Stir in 1 teaspoon vanilla extract and about 8 cups popped popcorn, transfer to a parchment-lined baking sheet to form a 2-inch tall rectangle, and sprinkle with flaky sea salt.
Allow to cool, then cut into squares!

- ½ cup popcorn kernels, popped (about 8 cups)
- 1½ sticks (12 tablespoons) salted butter
- 1 12-ounce bag marshmallows
- 1 teaspoon vanilla extract
- Flaky sea salt
Instructions
- In a large pot, brown butter over medium heat until butter is golden and smells nutty, 5 to 7 minutes. Add marshmallows to the browned butter and mix with a silicone spatula until melted.
- Remove pot from heat and mix in vanilla extract. Add popcorn slowly and mix to combine.
- Transfer popcorn mixture to a parchment-lined baking dish and press down to form a 2-inch tall rectangle. (Tip: Use a small sheet of parchment to press down cereal mixture to keep your hands mess-free). Sprinkle flaky sea salt on top. Let popcorn treats completely cool, then cut into squares. Store in an airtight container.
