What You Might Find in a Mystery Mushroom Sampler

Blue & Yellow Oyster Mushrooms

Delicately ruffled caps with a mild, slightly seafood-like flavor. They cook down beautifully and develop a buttery, tender texture when sautéed. Blue oysters turn gray when cooked; yellow oysters mellow to a nutty, mild finish.

Shiitake Mushrooms

A classic in many cuisines. Shiitakes have a rich, savory, umami-forward flavor and a meaty texture that holds up well to high heat. Trim the stems before cooking—they’re tough but great for stocks.

Lion’s Mane

Soft, fluffy, and almost crab-like in texture when cooked. Lion’s Mane takes on a naturally savory, slightly sweet flavor and crisps beautifully when sliced into medallions.
