Start the day on a delicious foot with a recipe that feels indulgent but is really just hearty and actually pretty healthy. This frittata is a comforting one-pan dish that can be added to bread for a filling sandwich with even more veggie toppings. We used delicata squash here, but any hardy squash can work. Mix with onions, spinach (or other leafy green of choice), and goat cheese for a fill-you-up-fast kind of meal.

Ingredients
- 1 delicata squash (about 8–10 ounces), thinly sliced
- 1 medium red onion, thinly sliced
- 3 tablespoons olive oil, divided
- Kosher
- Black pepper
- 18 eggs
- 1/4 cup heavy cream
- 2 cups spinach
- 5 ounces goat cheese
- Ciabatta rolls
- Avocado, sliced
- Sprouts
Instructions
- Preheat to 375 degrees. Toss squash and onions with 2 tablespoons of olive oil. Season with salt and pepper. Roast for 20-30 minutes until squash is tender and slightly golden. Remove from oven. (If you don’t have delicata, you can use any hardy winter squash, it just may require longer cooking time.)
- Increase oven heat to 400 degrees.
- In a large bowl, whisk eggs, heavy cream, and a pinch of salt until well combined. Mix in spinach and cooked squash and onion in eggs. Brush remaining 1 tablespoon of oil onto baking sheet, making sure to grease the sides, too.
- Pour egg mixture into baking sheet and evenly distribute vegetables in the pan. Crumble goat cheese over top. Cook for 10-15 minutes, until frittata becomes slightly puffed and eggs have set. Rest for 5 minutes, then slice into squares.
- Toast bread and add optional avocado and sprouts. Top with frittata square and serve as a sandwich. Enjoy!
Notes
Don’t have spinach or delicata squash? You can substitute whatever vegetables you have on hand. Think: kale, chard, arugula. Acorn, delicata, or even zucchini squash. Just roast hardier items first and save the leafy greens to be mixed in with eggs.

1st time customer here. Ordered my first box for delivery today (Sat 1/2/2021). Box wasn’t delivered. Tracking number says “shipping label has been created” but my box hasn’t been shipped nor is it jn transit yet, according to the tracking number. So….where is my produce?? I had meals planned around this produce box and purposely didn’t buy any produce at the grocery store yesterday. So now I have no produce and nothing to make meals with. Can’t find a way to get ahold of anyone (is there no customer service here??), other than an email which said I MAY receive a reply within 48 hours, excluding weekends (today is Sat, so I’ll receive a reply in 4 days??). This is frustrating and disappointing, to say the least, and is quite a terrible first impression of this company.

Sadly SOOOO many deliveries are in the same boat. Between the holidays, covid restrictions & people ordering online more than ever there are literally MILLIONS of packages that aren’t scanned & stuck in the shipping systems. I’ve been a misfit member four years. That’s not their normal practice AT ALL
because this seems like the right pathway to air your grievances and solve your problem
I’m sorry to tell u this is how this company operates. You’ll get lotsa excuses; holidays, it’s shippers fault, they ran out of ____ and on and on. Ts kinda sad but I could prob show u emails from year ago that say exactly what t says below.
Then you’ll finally get box w rotten fruits n veggies bc it sat somewhere. Either way it’s frustrating process.
No one answers emails timely. By time u get box resolved you’re 2/3 boxes past the problem or worse your problems stack up week after week after week. I used them weekly
for almost year before I simply gave up.
My billing was disaster bc nothing would get credited as promised. When they’re good, they’re awesome. Prob is the good is rare and bad became weekly norm.
They promised big changes bc new website coming. They blamed Covid customer influx on being overwhelmed. To me it came across as greed. Most smart companies stopped taking orders they couldn’t fulfill. Concentrated on their loyal customer base. Misfits unfortunately cannot seem to get this right.
I really feel your pain! I’d also skip veggies n fruits expecting my box. There’s only so much a family can consume in few days. They make it impossible to effectively plan meals.
Then one week delayed but following week isn’t and you’re getting boxes back to back!!
Or when u receive it must be consumed same day, which is impossible. Ya know they know so why just say so??
It’s really shame bc they’d be great operation if they could actually run effectively, realize rule of thumb is “customer always right” (or at least make them feel that way!) in my case my cousin referred me, I referred mom and sister and another cousin, several friends. They lost all of us.
The point is to know basically whatcha getting and what day, know it’s sourced well and enough for your family needs. They failed on every point, except mayb sourcing.
I wish u well… not sure your instincts off at all.

Me, too! I’m having a great experience with them. And I’ve had to get a refund on something that was missing. It was timely and taken care of.
I have also been disappointed in their customer service. That is something they need to fix.
I am just a fellow customer, but I offer my sympathy. I had the problem of a box delivered 1 day late (2 times, actually, but weather was kinder to the 2nd box.) I contacted them through “contact us” link at the bottom of homepage and they gave me a 30% discount on my next box.
Hope things get better for you! I have really enjoyed the vegetables and FRUIT, which I could never get from the CSA I had in Iowa.
This looks really good, but does it really call for 18 eggs? How many does it serve?
Hi Amelia, great question! Yes, this recipe does call for 18 eggs and depending on how you slice the frittata once it’s cooked, this should provide about 12 slices of frittata. But you can decrease the amount of eggs (just decrease the other fillings, too) and use a smaller pan. You might need to adjust the cooking time by a few minutes. Hi Hilda, great question! Instead of heavy cream, you could unflavored soy milk or a vegan whipping cream alternative. For the goat cheese, you can substitute a vegan-friendly cheese or omit it altogether! This recipe does call for quite a few eggs, so if you use a vegan egg substitute, just be sure to adjust the cooking times accordingly.
I use 7 or 8 eggs in a pie pan and it serves 6 if you want to make a smaller frittata. Hope this helps!

Hi Kimberly, great question! For this recipe, we used a full-size sheet pan, which is 26 in × 18 in. If you don’t have anything that size, you could use two, half-size sheet pans and simply adjust the cooking time to be shorter. Enjoy!
