- 1½ cups water
- 1 cup full-fat coconut milk, divided
- 1–2 tablespoons maple syrup
- ½ teaspoon vanilla extract
- Pinch of salt
- 1 ripe mango, peeled and cubed
- Toasted sesame seeds or shredded coconut (optional, for garnish)
Instructions
- In a saucepan, combine oats, water, ¾ cup of coconut milk, maple syrup, vanilla, and a pinch of salt. Bring to a simmer and cook until thick and creamy (7–10 minutes), stirring occasionally.
- Divide oatmeal into bowls. Top with mango cubes and drizzle with the remaining coconut milk.
- Garnish with sesame seeds or shredded coconut if using. Serve warm.
