Juicy, sticky-sweet summer melon is one of the classic flavors of the warmer months, and since melon season is only a few short months, we’re making the most out of these aptly named Sugar Kiss melons into a sickly sweet syrup, perfect for sweetening up cocktails, mocktails, and more. And the best part about this simple and sweet recipe, it’s almost entirely hands-off, so you can just let it chill ‘til it’s ready to enjoy.

Description
A sticky-sweet summer treat for your drinks, topping ice cream, and more!
Ingredients
Scale
- 1 Sugar Kiss melon, cut into 1-inch cubes
- 5–6 cups of granulated sugar
- Splash of warm water, if needed
Instructions
- Layer cubed melon with a layer of granulated sugar at the bottom of a bowl, jar, or jug. Repeat alternating layers until the container is full, then seal tightly with a lid or plastic wrap.
- Let chill in the fridge for about a week. (Over time, the sugar will draw out the juices of the melon and start to dissolve, creating a syrupy consistency.)
- After a week, strain out the melon and stir the remaining juice and sugar. If needed, add a very small amount of warm water to help dissolve the remaining sugar.
- Enjoy mixed with sparkling water, wine, or your drink of choice.
