- 2 tablespoons peanut or vegetable cooking oil
- 8 stalks scallions, cut into 2-inch pieces
- 3.5 ounces shiitake mushrooms, thinly sliced
- 3 tablespoons garlic, minced
- 3 tablespoons ginger, diced
- 1 red bell pepper, julienned
- 3 tablespoons oyster sauce (or mushroom flavored “oyster” sauce)
- 2 tablespoons toasted sesame oil
- 2 tablespoons chili oil
- 2 tablespoons soy sauce
- 1/4 cup roasted peanuts, chopped
- 12 ounces long, thin noodles (like lo-mein), cooked
Instructions
- In a large skillet or wok, add cooking oil and shiitake mushrooms. Cook for 3-5 minutes or until the pieces start to brown, stirring occasionally.
- Add the bell peppers and sauté for another 5 minutes or until the peppers start to soften. Toss in scallions, ginger, and garlic and cook for another 2-3 minutes or until the scallions turn bright green.
- Then, add oyster sauce, sesame and chili oils, soy sauce, peanuts, and noodles. Mix until evenly combined, taste, and adjust soy sauce to preference. Transfer to a platter and enjoy!
