For the dough:
- 5 cups pizza flour
- 1 tablespoon granulated sugar
- 1½ teaspoons kosher salt
- 3 tablespoons olive oil
- 1 tablespoon active dry yeast
- 1¾ cups warm water
For the pizza:
- 1½ tablespoons olive oil
- ¾ cup Odds & Ends Marinara Sauce
- 1½ cups shredded mozzarella
- 1 bulb fennel, thinly sliced
- 2 ears of corn, kernels removed
- 4 ounces chorizo, thinly sliced
- ¼ cup pickled banana peppers, sliced
Instructions
- For the dough: Add all the ingredients into a standing mixer fitted with the dough hook attachment. Mix on low until just combined, then increase the speed to medium and continue to knead for another 2-3 minutes until the dough has fully come together. Cover the bowl with a damp towel and let rise in a warm place until doubled in size, about 90 minutes.
- For the pizza: Preheat the oven to 500. Drizzle oil onto a sheet pan and evenly spread until the surface is covered. Knead pizza dough into the pan until the surface is covered. Evenly spread on a layer of marinara sauce, then distribute mozzarella, fennel, corn, chorizo, and banana peppers on top.
- Bake pizza for 12-15 minutes until cheese has melted and turns golden brown, and the crust is cooked through. Slice and serve.
