- Cook the bacon: Preheat oven to 375°F. Spread bacon pieces on a baking sheet and cook until crispy. Set aside.
- Make the spicy mayo: In a small bowl, combine mayo and chipotle-hab sauce. Stir until smooth and set aside.
- Toast the buns: On a grill or in a skillet, toast pretzel buns until golden. Set aside.
- Cook the burgers: Heat a cast iron pan or grill over high heat. Cook patties for about 2 minutes on one side. Flip, top each with a slice of cheddar, and cook for another 2 minutes. Transfer to a plate.
- Fry the eggs: Cook eggs over easy in a skillet.
- Assemble the burgers: Place a patty with melted cheese on the bottom half of each bun. Top with crispy bacon and a fried egg. Spread spicy mayo on the top bun and close. Serve immediately.
