- Peels, cores, and scraps from 4–6 apples
- 1 cup water
- ½ cup sugar (or honey for a softer flavor)
- ½–¾ cup apple cider vinegar (adjust to taste for tartness)
- Optional aromatics: 1 cinnamon stick, 2–3 whole cloves, or ½ teaspoon fresh ginger
Instructions
- Simmer scraps: In a saucepan, combine apple scraps, water, sugar, and spices (if using). Bring to a boil, then reduce heat and simmer for 15–20 minutes until liquid is slightly reduced and infused.
- Strain: Remove from heat and strain through a fine mesh sieve, pressing gently to release liquid. Discard solids (or compost them!).
- Add vinegar: Stir in apple cider vinegar while liquid is still warm. Taste and adjust vinegar level for tartness.
- Steep: Transfer to a clean jar, cover, and refrigerate for at least 24 hours to let flavors meld.
- Serve:
– Mix 2–3 tablespoons with sparkling water for a tangy apple soda.
– Stir into iced tea for a crisp, tart twist.
– Use as a cocktail mixer (pairs well with bourbon or gin).
Notes
Storage: Refrigerate in a sealed jar for up to 2 weeks. Flavor deepens over time.
