Ingredients
Scale
- 2 cups strawberry tops
- 3 cups water
- 1½ cups sugar
Instructions
- Add all of the ingredients to a large pot and bring to a boil.
- Lower heat and simmer for 20 minutes, or until slightly thickened and vibrant red.
- Drain the liquid into a bowl, straining out the tops for composting.
- Pour the strawberry liquid back into your pot and simmer for another 15 minutes, until thickened to a syrup-like consistency.
- Let the syrup cool until you’re able to handle it, then bottle and enjoy it fresh, or store in the fridge for up to 4 weeks.
