Sweet, tart, and oh-so cute, these possets give new life to peak-season passion fruit.

- 3 passion fruit
- 1 lime, zest and juice
- 1 cup heavy cream
- ½ cup granulated sugar
Instructions
- Cut each passion fruit in half and spoon out the seeds and juice into a fine-mesh sieve set over a bowl. Run the back of a spoon over the seeds to push out the juice, you should end up with about 4 tablespoons of juice. Place leftover seeds into a small bowl, cover, and set in the refrigerator. Place passion fruit shells cut side up on a plate
- In a small saucepan, bring heavy cream, sugar, and lime zest to a gentle simmer over medium-low heat. Continue to simmer, whisking occasionally for about 3-4 minutes. Remove from heat, whisk in passionfruit juice and lime juice, then strain mixture through a fine-mesh sieve.
- Evenly divide mixture into the passion fruit shell halves. Cover with plastic wrap and refrigerate for at least 4 hours.
- Add a spoonful of reserved passion fruit seeds on top of each posset. Let sit at room temperature for 5 to 10 minutes before serving.
