- 6 day-old good-quality croissants
- 3 cups half-and-half
- ½ cup sugar
- 1 cup cold heavy cream
- Dash of pure vanilla extract
- ¼ cup chopped unsalted pistachios
- ¼ cup unsweetened dried coconut flakes
- ¼ cup golden raisins
Instructions
- Preheat the oven to 350°F. Tear croissants into bite-sized pieces and spread them on a sheet pan. Bake until crisp, 8–10 minutes.
- In the meantime, combine half-and-half and sugar in a saucepan over low heat and bring just to a simmer, stirring to dissolve the sugar. Remove from heat.
- In a medium bowl, whip the heavy cream to soft peaks and stir in the vanilla.
- Transfer the toasted croissants to a 9×13-inch broiler-proof baking dish. Top evenly with pistachios, coconut, and raisins. Pour the hot half-and-half mixture over everything and let soak for a few minutes.
- Spread the whipped cream over the top. Bake for 25 minutes, until bubbly.
- Turn on the broiler. Broil on the middle rack until browned on top, about 3 minutes. Serve warm.
