  1. Preheat the oven to 350°F. Tear croissants into bite-sized pieces and spread them on a sheet pan. Bake until crisp, 8–10 minutes.
  2. In the meantime, combine half-and-half and sugar in a saucepan over low heat and bring just to a simmer, stirring to dissolve the sugar. Remove from heat.
  3. In a medium bowl, whip the heavy cream to soft peaks and stir in the vanilla.
  4. Transfer the toasted croissants to a 9×13-inch broiler-proof baking dish. Top evenly with pistachios, coconut, and raisins. Pour the hot half-and-half mixture over everything and let soak for a few minutes.
  5. Spread the whipped cream over the top. Bake for 25 minutes, until bubbly.
  6. Turn on the broiler. Broil on the middle rack until browned on top, about 3 minutes. Serve warm.
