A viral trend, but make it Misfits. We shook up this English cucumber salad for a fresh, food-waste-fighting lunch made with what we already had in our fridge.

- English cucumber, thinly sliced
- ½ red onion, thinly sliced
- Fresh dill
- Salt and pepper
- Olive oil
- Red wine vinegar
- Feta cheese
Instructions
- Carefully use a mandoline to thinly slice English cucumber and half a red onion.
- Roughly chop a few handfuls of fresh dill.
- In a bowl, combine prepped vegetables with a drizzle of olive oil, a glug of red wine vinegar, and salt and pepper to taste.
- Add about a ½ cup of crumbled feta cheese, depending on your preference.
- Stir, or shake to combine in a restaurant-style takeout container, and enjoy!
