For the golden berry jam:
- 2 cups golden berries
- 1 cup sugar
- 2 tablespoons water
- 1 teaspoon orange zest
- 2 tablespoons fresh orange juice
For the mascarpone whip:
- 8 ounces (1 cup) mascarpone
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
For assembly:
- 1 brioche loaf, cut into 1-inch cubes
- ¼ cup golden berries, halved, for garnish
Instructions
- For the jam: Add golden berries, sugar, water, and orange zest to a medium pot. Cook on medium heat until sugar melts and the golden berries begin to burst. With a wooden spoon, mash golden berries into chunky pieces and continue to cook until mixture becomes thick and syrupy, 8 to 10 minutes. Remove from heat, stir in orange juice, and let cool.
- For the mascarpone whip: Add mascarpone, whipping cream, powdered sugar, and vanilla extract into the bowl of a stand mixer with the whisk attachment. Whip on high speed until medium peaks form, 3 to 4 minutes.
- To assemble: In either six 8-ounce containers or in one 8-inch trifle bowl, add a layer of the mascarpone whip, followed by a layer of brioche, then a layer of golden berry jam. If using smaller containers, repeat layering once more. If using a trifle bowl, repeat until you run out of ingredients. Cover trifles with plastic wrap, then chill for at least 4 hours. When ready to serve, add halved golden berries on top as a garnish.
