- 2 cups carrot tops, chopped
- 1/4 cup basil, chopped
- 4 tablespoons pine nuts or nut of choice, toasted
- 1/4 cup Parmesan, grated
- 3 cloves garlic, peeled
- 1/2 cup olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- In a blender or food processor, add carrot tops, basil, Parmesan, garlic cloves, olive oil, salt, pepper, and nuts.
- Blend on high speed about 3 minutes until you reach a smooth, blended consistency. Add more oil in this step if your pesto is too thick for your liking.
