- 1 package Odds & Ends Potato Gnocchi
- Veggies of choice, chopped into 1-inch pieces (Brussels sprouts, asparagus, carrots, etc.)
- Aromatics like garlic and shallots, diced
- Fresh hardy herbs: rosemary, thyme, sage
- Olive oil
- Salt and pepper
- Parmesan cheese, for topping (optional)
- Sauce of choice (like Odds & Ends Marinara)
Instructions
- Preheat oven to 425°F.
- Bring 4 quarts of water to a rolling boil. Add gnocchi and boil for 3 minutes. Drain and set aside.
- On a sheet pan, toss together gnocchi, chopped veggies, garlic/shallots, and herbs. Drizzle generously with olive oil and season with salt and pepper.
- Roast for 17–20 minutes, tossing halfway through, until golden and crispy around the edges.
- Top with grated Parmesan and your favorite sauce. Serve and enjoy!
