It doesn’t get “beta” better than buttery, herby feta.
Ingredients

- ½ cup Athenos feta cheese, crumbled
- 1 stick of butter, softened
- 1–2 cloves of garlic, minced
- Zest of 1 lemon
- 2 tablespoons of dill, roughly chopped
- 3 cobs of corn
- Salt and pepper to taste
- A drizzle of olive oil
Instructions
- Roughly chop the dill and garlic, and zest the lemon.
- In a large bowl, combine the butter, feta, dill, garlic, lemon zest, and salt and pepper. Mix until smooth and combined.
- In a cast iron skillet, heat the olive oil. Once heated and glossy, add the corn, turning frequently, until lightly charred on all sides.
- Remove the corn from the skillet and top generously with feta butter. Serve and enjoy!
