- 4 large egg yolks
- 1 cup whole milk
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon (or your favorite warming spice like nutmeg, ginger, or a combination)
- ½ teaspoon salt
- 7–8 slices Odds & Ends Banana Bread
- Butter for cooking
Instructions
- In a medium bowl, whisk together the egg yolks, milk, vanilla, cinnamon (or warming spice of your choice), and salt. Pour into a shallow baking dish.
- Slice the Odds & Ends Banana Bread into ¾-inch thick slices. Lay the slices in the custard mixture, letting them soak for 15 minutes. Flip the slices and soak the other side for another 15 minutes.
- Heat a large skillet over medium-low heat. Add a pat of butter to the skillet and cook 2-3 slices of banana bread at a time for about 3 minutes per side, or until golden brown and firm.
- Serve warm, topped with maple syrup, fresh berries, or sliced bananas.
