For the fritters:
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon cardamom
- ½ teaspoon kosher salt
- 2 teaspoons fresh lemon juice
- 2½ cups (about 2 to 3 apples) apples, peeled, cored, and diced
- 2 tablespoons granulated sugar
- 2 large eggs, room temperature
- ¼ cup whole milk
- ½ teaspoon vanilla extract
- vegetable or canola oil, for frying
For the glaze:
- 1¼ cups powdered sugar
- ½ teaspoon vanilla extract
- 3 teaspoons maple syrup
- 1–2 teaspoons water, as needed
Instructions
- In a medium bowl, whisk together the flour, baking powder, cinnamon, cardamom, and salt. Set aside.
- In a small bowl, mix together apples and lemon juice, set aside.
- In a large bowl, whisk sugar and eggs together until fully combined and sugar dissolves. Add milk and vanilla, mix until well combined. Add flour mixture in 2 additions and mix until flour is saturated. Fold in apples.
- Add oil halfway up a dutch oven or frying pan and heat over medium heat until oil reaches 375F.
- Carefully drop ⅓ cup of batter into the oil and fry until golden brown on each side, 2 to 3 minutes per side. Transfer to a paper-towel-lined cooling rack and let cool. Repeat with remaining batter.
- For the glaze, whisk together powdered sugar, vanilla extract, maple syrup, and 1 teaspoon water until mixture becomes smooth and reaches the consistency of thick cream. Add more water, a ½ teaspoon at a time, until the glaze is pourable.
- Dip one side of each apple fritter into the glaze, then let set on cooling rack before serving.
