Apple Fritters with Maple Glaze

For the fritters:

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon cardamom
  • ½ teaspoon kosher salt
  • 2 teaspoons fresh lemon juice
  • 2½ cups (about 2 to 3 apples) apples, peeled, cored, and diced
  • 2 tablespoons granulated sugar
  • 2 large eggs, room temperature
  • ¼ cup whole milk
  • ½ teaspoon vanilla extract
  • vegetable or canola oil, for frying

For the glaze:

  • 1¼ cups powdered sugar
  • ½  teaspoon vanilla extract
  • 3 teaspoons maple syrup
  • 12 teaspoons water, as needed

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, cinnamon, cardamom, and salt. Set aside.
  2. In a small bowl, mix together apples and lemon juice, set aside.
  3. In a large bowl, whisk sugar and eggs together until fully combined and sugar dissolves. Add milk and vanilla, mix until well combined. Add flour mixture in 2 additions and mix until flour is saturated. Fold in apples.
  4. Add oil halfway up a dutch oven or frying pan and heat over medium heat until oil reaches 375F.
  5. Carefully drop ⅓ cup of batter into the oil and fry until golden brown on each side, 2 to 3 minutes per side. Transfer to a paper-towel-lined cooling rack and let cool. Repeat with remaining batter.
  6. For the glaze, whisk together powdered sugar, vanilla extract, maple syrup, and 1 teaspoon water until mixture becomes smooth and reaches the consistency of thick cream. Add more water, a ½ teaspoon at a time, until the glaze is pourable.
  7. Dip one side of each apple fritter into the glaze, then let set on cooling rack before serving.
