Chilled Green Bean Pasta

  • 1 pound pasta of choice, cooked according to directions and preference
  • 3 cups baby arugula
  • 2 cups sautéed green beans, chopped into 1-inch pieces
  • 3 tablespoons extra virgin olive oil
  • 1/4 cup freshly grated Parmesan, plus more for garnish
  • Juice of 1 lemon
  • 1 teaspoon black pepper

Instructions

  1. In a large mixing bowl, toss all of the ingredients together until well combined. Chill in the fridge for one hour.
  2. When ready to serve, toss again, top with more grated Parmesan cheese, share, and enjoy!
